Inagiku ** JAPANESE At Inagiku, you'll have excellent Japanese food that gets top marks for ingredients, preparation, and presentation. In delicately lighted and subtle decor, you can enjoy house favorites like sashimi, tempura, and teppanyaki-with separate dining areas for tempura and a sushi bar. The tokuscn sashimi morikimi is masterful in its presentation: An assortment of raw fish-including salmon, prawns, and clams-is laid out in an ice-filled shell inside of which nestles the skeleton of a whole fish. It's odd and delightful at the same time. I recommend the tempura moriawase, a combination of seafood and vegetables that's very lightly deep fried. Also highly recommended are the teppanyaki prawns. Raffles Grill *** FRENCH Dining in the grande dame of Singapore achieves a level of sophistication unmatched by any other five-star restaurant. The architectural charm and historic significance of the old hotel will transform dinner into a cultural event, but don't just come here for the ambience; the food is outstanding as well. Three set dinners allow you to select from the a la carte menu dishes like roasted veal tenderloin or roasted rack of suckling pig, the latter a highly recommended choice for its juicy meat under crispy mouthwatering skin. The 400-label wine list (going back to 1890 vintages) could be a history lesson, and if you'd like you can request the cellar master to select a wine to match each course. The fabulously attentive service from the wait staff will make you feel like you own the place. Formal dress is required.
