Lei Garden ** CANTONESE Lei Garden, with three locations in Singapore, six in Hong Kong and Kowloon, and two in Guangzhou, lives up to a great reputation for the highest quality Cantonese cuisine in one of the most elegant settings. Actually, of the three local branches, this one is special for the unique ambience of CHIJMES just outside its towering picture windows. Highly recommended dishes are the "Buddha jumps over the wall," a very popular Chinese soup made from abalone, fish tnaw (stomach), shark's fin, and Chinese ham. It's generally served only on special occasions. To make the beggar's chicken, they take a whole stuffed chicken and wrap and bake it in a lotus leaf covered in yam, which makes the chicken moist with a delicate flavor you'll never forget. For either of these dishes, you must place your order at least 24 hours in advance when you make your dinner reservation. Also try the barbecued Beijing duck, which is exquisite. Snappers ** SEAFOOD With a view of the Ritz-Carlton's lovely pool and gardens, this restaurant is hardly your typical poolside snack bar. Snappers invents mouthwatering recipes for new ways to enjoy fresh seafood. The crispy sea bass with eggplant and walnut coriander dressing melts in your mouth. The seafood platter is awesome. But if the a la carte menu doesn't have what you're looking for, you can have your choice of live seafood prepared to your specs. This is one of the city's top choices for delicious dining with a terrific wine list and impeccable service. You will never be disappointed.
