Tiffin Room * SOUTHERN INDIAN Tiffin curry came from India and is named after the three-tiered containers that Indian workers would use to carry their lunch. The tiffin box idea was stolen by the British colonists, who changed around the recipes a bit so they weren't as spicy. The cuisine that evolved is pretty much what you'll find servcd at Raffles's Tiffin Room, where a buffet spread lets you select from a variety of curries, chutneys, rice, and Indian breads. The restaurant is just inside the lobby entrance of Raffles Hotel and carries the trademark Raffles elegance throughout its decor.

Doc Cheng’s NEW ASIA/FUSION Doc Cheng's calls itself "The Restaurant for Restorative Foods," but you won't find any ancient Chinese secrets here. Doc Cheng, the hero of the joint, was part man and part mythological colonial figure. Educated in Western medicine in England, he was a sought-alter physician who became a local celebrity and notorious drunk. His concept of restorative foods is therefore rather skewed, but the restaurant banks on the decadence of the attraction and serves up "transethnic" dishes smothered in tongue-in-cheek humor. Guest chefs make the menu ever changing-the latest and greatest, an unbelievably scrumptious tamarind charcoal beef short ribs dish on portobello mushrooms. Equally well prepared (though lighter) is the charcoal-fried shutome swordfish on risotto. The house wine is a Riesling (sweet wines are more popular with Singaporeans) from Raffles's own vineyard. Three separate dining areas allow you to dine under the veranda, on the patio, or in cozy booths inside.
